Chef Abbie Gellman – Healthy Meal Ideas for Summer
New Haven, Connecticut (WTNH) – It’s officially summer, and that means outdoor fun, like alfresco dining, grilling, and picnicking. One way or another, everything is even more delicious when you eat outside in the fresh air, and even more so, if your food is healthy and nutritious.

Chief Abbie Gellman.
Abbie shows our viewers how to prepare the following tasty options:
- Pistachio Summer Salad – Includes nectarines, farro, scallions, pistachios and a nice lemon vinaigrette
- Pistachio and Pesto Pasta Salad – Includes pasta, pistachios and cherry tomatoes
Abbie joins the Wonderful pistachios company, and she says they’re a fabulous, healthy addition to meals or as a snack on their own.
Abbie says, “A serving of pistachios has six grams of plant-based protein and three grams of fiber plus those healthy fats, so this trio really helps fill you up. And they have all these fun flavors. There is roasted honey, there is sweet pepper. And I like to put them together and make like a spicy sweet combo. There’s salt and vinegar, or just plains and shells and all kinds of fun snack ideas.
Natasha also spoke to Chef Abbie about creating a cool summer drink option for the season, called a POM Summer Breeze. She combines Pom Wonderful – 100% pomegranate juice, as well as club soda and lemonade to create a light and bubbly mocktail.
Abbie shared an idea for a sweet, healthy and delicious dessert, Pomegranate Dark Chocolate Bites – with melted dark chocolate, pomegranate seeds and sea salt: all gathered in mini-muffin molds and put in the fridge for an hour. Enjoy!
